Apple Muffins
Makes 12 standard muffins

Ingredients
  • 4 tablespoons butter (half a stick) softened
  • 2 tablespoons olive oil
  • ½ cup brown sugar
  • ¾ cup all-purpose flour
  • ½ cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ tsp. salt
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon vanilla
  • 2 lg. eggs
  • 1 cup granny smith apples, peeled, chopped or shredded
  • ½ cup walnuts, chopped coarsely (optional)
Directions
  • In a large bowl, cream butter and sugar until well blended. 
  • Add eggs one at a time until well incorporated.
  • In a small bowl, whisk the flour, baking soda, baking powder, salt and cinnamon
  • Add flour mixture to butter mixture just until combined. 
  • Add the apples and nuts and incorporate.
  • Line muffin tin with backing cups and fill ¾ full.
  • Bake at 375° F for 18 minutes or until toothpick comes out clean
  • TURN OFF THE OVEN!!!!
