Lemon Tart
Serves 8
 
Ingredients
Crust
  • 1 ½ cup flour
  • 1 stick butter
  • 1 egg yolk
  • 1 teaspoon vanilla
  • ¼ cup sugar
Filling​
  • 2 cup milk
  • Zest of one lemon
  • 1 teaspoon vanilla extract
  • 4 egg yolks
  • Juice of 1 lemon
Toppings
  • ¼ cup sour cream
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • ¼ cup crushed pistachios
  • Handful of blue berries or other fruit
 
Directions
Crust
  1. Heat over to 350 degrees. Grease and flour tart pan  
  2. Whisk together sugar and flour.
  3. Work butter into dry ingredients with a pastry cutter, your fingers or two knifes. Incorporate butter until batter resembles course crumbles.
  4. Add vanilla and the egg yolk and incorporate.
  5. Press tart dough into prepared tart pan and bake at 350 F for 15-18 minutes.
  6. Remove from over and cool completely before filling.
Filling
  1. In a medium saucepan on low heat combine sugar, cornstarch and milk. Whisk until combined.
  2. Add lemon juice, zest, vanilla and egg yolks and cook on low heat until sugar is dissolved and mixture thickens.
  3.  Cool to room temperature before pouring into tart shell.
  4. Smooth with a spatula and cool for 2+ hours
Toppings
  1. Whip heavy whipping cream with vanilla and sugar until peaks form. Add sour cream and whip just until combined. 
  2. Pipe onto cooled tart and decorate with crushed pistachios and fruit.
