- 1 ½ cup flour
- 1 stick butter
- 1 egg yolk
- 1 teaspoon vanilla
- ¼ cup sugar
- 2 cup milk
- Zest of one lemon
- 1 teaspoon vanilla extract
- 4 egg yolks
- Juice of 1 lemon
- ¼ cup sour cream
- 1 cup heavy whipping cream
- 2 tablespoons sugar
- 1 teaspoon vanilla
- ¼ cup crushed pistachios
- Handful of blue berries or other fruit

- Heat over to 350 degrees. Grease and flour tart pan
- Whisk together sugar and flour.
- Work butter into dry ingredients with a pastry cutter, your fingers or two knifes. Incorporate butter until batter resembles course crumbles.
- Add vanilla and the egg yolk and incorporate.
- Press tart dough into prepared tart pan and bake at 350 F for 15-18 minutes.
- Remove from over and cool completely before filling.
- In a medium saucepan on low heat combine sugar, cornstarch and milk. Whisk until combined.
- Add lemon juice, zest, vanilla and egg yolks and cook on low heat until sugar is dissolved and mixture thickens.
- Cool to room temperature before pouring into tart shell.
- Smooth with a spatula and cool for 2+ hours
- Whip heavy whipping cream with vanilla and sugar until peaks form. Add sour cream and whip just until combined.
- Pipe onto cooled tart and decorate with crushed pistachios and fruit.
