Vanilla cupcakes with Chocolate frosting
Makes 12 Cupcakes
 
Ingredients
Cupcakes
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup whole milk
  • ¼ cup sour cream
  • 2 teaspoon pure vanilla extract
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 eggs
Chocolate Frosting
  • 1 cup heavy whipping cream
  • ½ package white chocolate instant pudding mix
  • ¼ cup cocoa powder
  • ½ cup butter – softened
 
Directions
Vanilla Cupcakes
  1. Preheat oven to 350 degrees F.
  2. Line a muffin tin with liners.
  3. Sift together dry ingredients and set aside.
  4. In the bowl of an electric mixer cream butter until light and fluffy, about two minutes. Slowly add the sugar and continue to mix for another three minutes.
  5. Add eggs one at a time until well incorporated.  
  6. On slow mixing speed, add the flour mixture in two additions alternating with milk and yogurt.
  7. Fill cups approximately 2/3 full and bake until a knife or toothpick comes out clean (14-18 minutes). Transfer to racks to cool before frosting.
Chocolate Frosting
  1. Place whisk attachment and metal bowl of mixer into the freezer for ten minutes before starting.
  2. Combine pudding mix and heavy whipping cream in the bowl and whip until light and fluffy approximately three minutes – do not over beat, as the frosting will loose its “fluff”.
  3. Add cocoa powder and beat until incorporated – about another minutes.
  4. Add butter and beat just until incorporated.
  5. Frost cupcakes.
