Gluten-free Peanut Butter Cookies
Makes about 12 3” round cookies
These cookies are incredibly quick and easy to make. They are crispy around the edges and gooey and chewy in the center.

Makes about 12 3” round cookies
These cookies are incredibly quick and easy to make. They are crispy around the edges and gooey and chewy in the center.
Ingredients:
- 1 cup smooth peanut butter
- 1 cup light brown sugar
- ½ cup almond flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 large egg
Directions:
- Preheat over to 350 degrees F
- Sift together almond flour, baking soda and salt. Set aside.
- Cream peanut butter and sugar until light and fluffy.
- Add eggs and vanilla extract until well combined.
- Add almond flour and mix until combined.
- Roll the dough into balls about 1 ½ - 2 inches in diameter. (This will be greasy - do not fret)
- Place dough balls onto parchment paper and press down with a fork or cookie stamp until cookies are about ¼ inch thick.
- Bake until edges are golden brown (8-10 minutes)
