Pumpkin Anise Muffins

Ingredients
Muffins
  • 3 cups flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. powdered anise
  • 1 tsp. cardamon 
  • 2 eggs
  • 2 cups brown sugar
  • Zest of one orange
  • 1 teaspoon vanilla extract
  • 5 oz. container plain yogurt
  • 1 cup vegetable oil
  • 1 15 oz can pumpkin puree 
Orange glaze 
  • 2 tbs. orange juice
  • 1 tsp vanilla 
  • 1 cup powdered sugar
  • Pumpkin seeds for topping (optional)
 
Directions
Muffins
  1. Heat oven to 350 F degrees. Line cupcake pan with papers.
  2. Whisk together dry ingredients and set aside.
  3. Whisk together sugar, eggs, and orange zest. 
  4. Add yogurt and vanilla and mix until combined. 
  5. Add flour mixture in three additions alternating with pumpkin puree and oil. 
  6. Pour batter into prepared bundt pan and bake for 40 minutes or until knife comes out clean. 
  7. Allow to cool in pan for at least 15 minutes before removing from pan. 
Orange Glaze
  1. Combine powdered sugar, orange juice and vanilla in a saucepan. 
  2.  Heat until sugar is dissolved and glaze is thick and shiny. 
  3. Quickly decorate muffins and sprinkle with pumpkin seeds.
