Olive Oil, Honey and Seed Muffins
Makes 6 Extra Large Muffins or 12 standard muffins

Ingredients
  • 1 1/2 cups flour
  • 1/2 cup flax meal
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 cup sugar
  • 1/3 cup honey
  • 1/2 tsp. salt
  • 1/2 cup plus 2 tbs. olive oil
  • 1/4 cup Greek or vanilla yogurt
  • 2 lg. eggs
  • 2 tbs. sunflower seeds +  1/2 tsp. for topping
  • 2 tbs. millet seeds +  1/2 tsp. for topping
  • 2 tbs. flax seeds +  1/2 tsp. for topping
Directions
  • In a large bowl whisk together flour, flax meal, baking powder, baking soda, sugar, salt and 2 tbs. of all seeds
  • Add olive oil, honey, yogurt and eggs and mix until combined
  • Line a muffin tin with paper cups or parchment rounds and fill with batter
  • Sprinkle remaining seeds on top of batter in each muffin cup
  • Bake at 325° F for 20 minutes for extra large muffins or 16-18 minutes for standard muffins.
