Olive Oil, Honey and Seed Muffins

Ingredients
- 1 1/2 cups flour
- 1/2 cup flax meal
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 cup sugar
- 1/3 cup honey
- 1/2 tsp. salt
- 1/2 cup plus 2 tbs. olive oil
- 1/4 cup Greek or vanilla yogurt
- 2 lg. eggs
- 2 tbs. sunflower seeds + 1/2 tsp. for topping
- 2 tbs. millet seeds + 1/2 tsp. for topping
- 2 tbs. flax seeds + 1/2 tsp. for topping
- In a large bowl whisk together flour, flax meal, baking powder, baking soda, sugar, salt and 2 tbs. of all seeds
- Add olive oil, honey, yogurt and eggs and mix until combined
- Line a muffin tin with paper cups or parchment rounds and fill with batter
- Sprinkle remaining seeds on top of batter in each muffin cup
- Bake at 325° F for 20 minutes for extra large muffins or 16-18 minutes for standard muffins.
