Plum Tart with Butter Sage Crust
Serves 8
 
Ingredients
Crust
  • 1 ½ cup flour
  • 1 stick butter
  • 1 egg
  • ¼ cup sugar
  • 2 tbs. finely chopped fresh sage
Almond honey filling
  • 1 cup almonds - pulsed in a food processor
  • 1/4 cup honey
Topping
  • 12 plums, thinly sliced
  • 3 tbs. melted butter
  • 1 tbs. finely chopped sage
Directions
Crust
  1. Heat over to 350 degrees. Grease and flour tart pan  
  2. Whisk together sugar, flour, and chopped sage.
  3. Work butter into dry ingredients with a pastry cutter, your fingers or two knifes. Incorporate butter until batter resembles course crumbles.
  4. Add egg and incorporate.
  5. Press tart dough into prepared tart pan, pierce crust all over, and bake at 350 F for 15-18 minutes.
  6. Remove from over and cool completely before filling.
Filling
  1. Pulse almonds in food processor until several larger pieces remain but most of the almonds are nearly the consistency of almond meal.
  2. Add honey and mix until incorporated.
  3. Spread almond honey filling onto top of crust.
Topping
  1.  Arrange plums on top of almond filling.
  2. Bake 15 minutes.
  3. Mix chopped sage and butter. Brush on and bake for an additional five minutes.
