- 1 ½ cup flour
- 1 stick butter
- 1 egg
- ¼ cup sugar
- 2 tbs. finely chopped fresh sage
- 1 cup almonds - pulsed in a food processor
- 1/4 cup honey
- 12 plums, thinly sliced
- 3 tbs. melted butter
- 1 tbs. finely chopped sage
Crust
- Heat over to 350 degrees. Grease and flour tart pan
- Whisk together sugar, flour, and chopped sage.
- Work butter into dry ingredients with a pastry cutter, your fingers or two knifes. Incorporate butter until batter resembles course crumbles.
- Add egg and incorporate.
- Press tart dough into prepared tart pan, pierce crust all over, and bake at 350 F for 15-18 minutes.
- Remove from over and cool completely before filling.
- Pulse almonds in food processor until several larger pieces remain but most of the almonds are nearly the consistency of almond meal.
- Add honey and mix until incorporated.
- Spread almond honey filling onto top of crust.
- Arrange plums on top of almond filling.
- Bake 15 minutes.
- Mix chopped sage and butter. Brush on and bake for an additional five minutes.
