​Chai Ginger Sugar Cookies
Makes about 30 3” round cookies
 
Ingredients:
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • ¼ cup honey
  • 4 cups unbleached, all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon grated, fresh ginger
  • 1 teaspoon cinnamon
  • ¾ teaspoon all spice
  • ½ ground dry ginger
  • 2 teaspoons cardamom
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 large eggs
 
Directions:
  1. Preheat over to 350 degrees F
  2. Sift together flour, cinnamon, cardamom, all spice, dry ginger, baking powder and salt.
  3. Cream butter and sugar until light and fluffy
  4. Add honey, eggs, grated fresh ginger, and vanilla extract until well combined
  5. Split dough into two portions and shape into 1-inch thick disks
  6. Refrigerate for at least 40 minuets
  7. Remove one round and roll into ¼-inch thick sheet
  8. Cut cookies into desired shapes and place on parchment paper
  9. Freeze tray of prepared cookies for 10 minutes
  10. Bake until edges are golden brown (9-11 minutes)
  11. Cool completely before decorating
