Chai Ginger Sugar Cookies

Makes about 30 3” round cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- ¼ cup honey
- 4 cups unbleached, all-purpose flour
- ½ teaspoon salt
- 1 tablespoon grated, fresh ginger
- 1 teaspoon cinnamon
- ¾ teaspoon all spice
- ½ ground dry ginger
- 2 teaspoons cardamom
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 large eggs
Directions:
- Preheat over to 350 degrees F
- Sift together flour, cinnamon, cardamom, all spice, dry ginger, baking powder and salt.
- Cream butter and sugar until light and fluffy
- Add honey, eggs, grated fresh ginger, and vanilla extract until well combined
- Split dough into two portions and shape into 1-inch thick disks
- Refrigerate for at least 40 minuets
- Remove one round and roll into ¼-inch thick sheet
- Cut cookies into desired shapes and place on parchment paper
- Freeze tray of prepared cookies for 10 minutes
- Bake until edges are golden brown (9-11 minutes)
- Cool completely before decorating
